Tasty Tuesday: Pot Roast Turnovers

Happy New Year!

To start the new year off, I’m sharing an easy and yummy recipe for leftovers:  Pot Roast Turnovers.  The idea for these was born during a ultra-cold Minneapolis day, when neither Mr. O or myself wanted to go to the grocery store.  So glad we didn’t!

We raided the fridge and found 3 easy ingredients:  leftover pot roast, mozzarella cheese, and a tube of ready to bake breadsticks.

Then we just loaded the breadsticks with the pot roast and cheese.  Some have fresh mozzarella  some have mozzarella off a block.  (personal opinion:  the fresh mozzarella was fantastically tasty)

Fold them over, pinch the edges, bake them according to the directions on the package of breadsticks, and your done!

We folded some over and rolled some up.  Both were equally delicious!

Tomorrow night I am making roast chicken, and I think that this will be a great way to use of the leftovers of the chicken, stuffing and gravy!

I’m also thinking that this would be a tasty way to get another meal out of extra taco filling, pork chops, meatballs – just about anything.  Quick, easy, yummy, and it makes space in the fridge.  We’re also thinking that these would be a fun party appetizer!

What fun ideas do you have for leftovers?  I’m always looking for good ideas!!
