Mr. O was back in the kitchen again yesterday, whipping up his famous ham quiche. I need to go on record that before I met Mr. O, I wouldn’t have touched quiche with a 20-foot pole if I was dying of starvation in the Alaskan wilderness in the dead of winter. Not that I would probably have quiche as an option in that situation, but I digress…
When he made this for me the first time, I admit I sat down to eat it to be polite. After the first bite, I was hooked. And while quiche is still not something that I crave on a regular basis, I certainly am able to shovel it in without a problem every time he makes it.
Try it, you’ll like it!
Ham Quiche
Place the following ingredients into a greased 10″ pie plate:
- 2 cups diced ham
- 2 diced onions (just as good without the onions if you’re not a fan)
- 1 cup grated Swiss cheese
Mix the following ingredients with a mixer at high speed:
- 2 cups milk
- 4 eggs
- 1/2 cup biscuit mix
- 1/2 tsp salt
- 1/4 tsp pepper
Pour mixture over ham, onions and cheese in pie plate. Bake at 350° for 55 minutes.
Let stand 5 minutes before serving.
